What is a Snack Cake?
Snack Cakes are awesome to munch in in the middle of the week when you want to feel privileged and pamper yourself (in the middle of the week!)
These cakes are generally baked in a square dish and have little or no icing on them. If you are a baking nerd, read this article which elaborates more on snack cakes. It is said that the texture of a snack cake should be fluffier or lighter than brownies.

What is a Chocolate Banana Snack Cake?
This Chocolate Banana Snack cake is made from bananas and cocoa powder as primary “flavor-inducing” ingredients of the cake. As I said above, a snack cake can be served with/without icing.

Ingredients for making Chocolate Banana Snack Cake
You will need these ingredients for making this cake:
- Flour: Use all-purpose flour. Avoid substituting with Whole-wheat flour as it will only make this cake dense. Maybe you can try substituting 25% of the flour with Whole-wheat to minimize the denseness.
- Cocoa Powder: For the dark and awesome flavor of this cake. Use Hershey’s or Cadbury Cocoa Powder.
- Leavening Agent: We only use Baking soda for making this cake.
- Over-ripe Bananas: The riper they are the better. That is also the reason for using slightly less sugar in this cake. You may also use regular yellow bananas. Just increase the powdered sugar by 10-15 grams.
- Speaking of sugar, let’s see the next ingredient on the list i.e., Sugar: You may use “homemade” powdered sugar. Remember to sift the sugar before measuring it. Do not use it as it is.
This is one of the ten baking tips I share for beginners in this post. - Oil: This is what keeps this cake moist and not dense. Yes butter cakes are slightly on the denser side than oil-based cakes.
- Milk: A common pantry ingredient that goes in the recipe. Do not substitute water instead of milk as milk helps this cake rise.

How to make the easy Chocolate Banana Snack Cake?
3. Preheat the oven for 10 minutes at 180°C/356°F and transfer the batter to an 8 by 8 square dish.
Spreading Sauce(love) on the Cake
1. Once the cake cools, spread the sauce on the cake top. There is no need to make layers. This is not a layer cake but just a snack cake with a little icing on top. Sprinkle few chocolate chips/chocolate sprinkles/chocolate shavings if you have them on hand.
2. Now, chill the cake for at least an hour before slicing. I did not chill the cake and cut before the sauce could set properly. So I did not get clean cuts on the slices. It tasted delicious nevertheless!

Eggless Chocolate Banana Snack Cake Recipe
Chocolate Banana Snack Cake
Equipment
- OTG /Microwave Oven
Ingredients
- 160 grams All-purpose Flour
- 20 grams Cocoa Powder (1/4 cup)
- ¾ teaspoon Baking Soda
- 100 grams Powdered Sugar/Icing Sugar
- 50 ml Any Odorless Oil
- 100 grams Ripe Bananas (mashed)
- 100 ml Milk
- 1 teaspoon Vanilla Extract
Instructions
- Measure and sift the dry ingredients: flour, cocoa powder, baking soda and salt in a bowl. Also sift in sugar.
- Mash the bananas and add oil. Add in the remaining ingredients like milk and vanilla extract and mix well.
- Add the banana-milk mixture to the dry ingredients and mix gently. Preheat the oven for 10 minutes at 180°C/356°F
- Transfer the batter to an 8 by 8 square dish and bake for 25 minutes at 170°C/338°F. At 25 minutes, check the cake for doneness with a toothpick.
- Once done, let it cool for 15 minutes before demoulding.
- Wait for an hour to cool completely if applying icing on it.
Notes
Tips:
1. If you will be using the chocolate sauce to decorate the cake, you may skip the chocolate chips sprinkled on top of the cake before baking. This cake tastes amazing with/without the sauce.
2. Use ripe bananas so you can use less sugar in making the cake. The more the black spots the better.
