Sugar-free Banana Flapjack Bars

Ingredients

  • 1.5 cups Oats divided
  • 1.5 tbsp Softened Butter (Use Vegan Butter if making Vegan Bars)
  • 1 large banana (or 2 small baby bananas)
  • 50 grams Jaggery Powder
  • ½ tsp Sesame seeds (optional)
  • 1 tbsp Dried Cranberries
  • 1 tbsp Dried Cherries

Instructions

  • Line a 7 by 5 inch rectangular cake tin with oil and parchment and set aside.
  • Roast 1.5 cups Oats and keep it aside for few minutes until it cools.
  • Once the Oats have cooled, keep ½ cup Oats aside and powder only 1 cup Oats.
  • In a separate bowl, using a fork, mash the banana and add sesame seeds, jaggery powder and soft butter. Mix well.
  • Bring them together with the same fork.
  • Now add all the oats; the powdered ones and the oats in the half cup set aside earlier.
  • Once the mixture has come together transfer it to the prepared tin which we lined and set aside in the first step.
  • Press the mixture evenly and chop the cherries and cranberries. You can use them as a whole if you prefer. Spread them all over and press them a little on the top.
  • Preheat the oven for 10 minutes at 180 degree Celsius.
  • Bake for 10 minutes at 180 degree Celsius. Let it cool for 10 minutes again.
  • Make 'cuts' as per your choice. Cool completely before serving.

Notes

You can use regular jaggery as well. Just chop and melt it before adding to the mix. Also, add it before you add the oats.
You may use any dried fruits like walnuts and peanuts and seeds like flax seeds, melon seeds, etc.
